Weekends tend to be super busy around our house. Brighton is home from work and knee deep in projects and maintenance around our little homestead. I'm juggling the baby and chores around the house and helping Brighton when I can. Then there's the random errands we have to run and church on Sunday, and often times we have plans to meet up with family and friends. Even though we still wake up early on the weekends, before we know it, the day is half over and we still have much to do. So a lunch that's easy to whip together is a must. I threw this together the other day and it made a perfect, light but filling and flavorful lunch with little hassle and easy cleanup.
Forget store bought pizza crust or frozen pizzas again. With this homemade pizza crust recipe you can bring pizza night right to your own oven. The best part? You can be as crazy and creative as your heart desires with the toppings.
Breaded chicken is something we all love, but deep frying is messy, time consuming, and greasy! So here's a recipe for delicious chicken strips with a cheesy crisp breading baked right in the oven. The best part? The breading is only three ingredients! And there's a three ingredient gravy to go with it!
Say goodbye to those biscuit tins that make you jump every time you have to squeeze them to pop them open. These baking powder biscuits are simple and delicious and take just as much time to prepare as the refrigerated Pillsbury Doughboy brand.
I love biscuits and could eat them with almost anything. I make them to go with soups, comfort foods (including Red Gravy and Rice), and of course with any kind of breakfast or brunch. These biscuits are easy to make and only require five ingredients! So pull out your flour, salt, baking powder, butter, and milk and let's get to baking!
Banana bread is one of my absolute favorite quick breads. It is sweet and moist and takes no time to prepare. Some people consider this a dessert bread but I love to eat it in the morning for breakfast with some berries. Does this mean I'm starting my day off with dessert? Not a bad way to start the day in my opinion!
Fall is right around the corner and cozy comfort foods are going to be high on the dinner list. From stews to casseroles to soups, hot meals hit the spot on those cool autumn evenings. One of my all-time favorite fall meals is a dish my mom calls Red Gravy and Rice. It's a Cajun dish which, in my personal opinion, make the best comfort foods known to man. I remember coming home starving from sports practice and smelling the red gravy on the stove. I knew I wouldn't be hungry for long with this meal in the making! I made it a point to take her recipe with me when I got married, and now I make it for my husband. We both put ourselves into a food coma because neither of us can get enough of this Cajun comfort food.
My husband is a huge fan of mushrooms on pretty much everything. But I can't stand them, and since I do most of the cooking, mushrooms are not a normal staple in our diet. However, every now and then I cave and involve mushrooms somehow. This chicken and mushroom pasta is simple and and done in one pot so the clean up is a breeze. And, it's easy to pick out the mushrooms if you hate them as much as I do! Pair this dish with Twisted Cheesy Garlic Bread and you've got a great meal in store!
Salmon is one of my favorite proteins. It's light, packed with nutrients, and surprisingly filling. And I always feel a fresh burst of energy after having salmon as my entree. On top of it all, salmon is easy to bake or grill. This simple recipe includes broccoli, zucchini, and tomato for healthy carbs and you can serve with a side of brown rice if desired to get your whole grains in as well.
One skillet meals are a great summer go-to. They are quick and easy and the clean-up is even less of a hassle. This sausage and veggie medley is perfect for a light summer meal if you've gotten sick of grilling hamburgers and hot dogs for days.
This fried rice recipe is packed full of veggies and flavor without having to open a greasy Chinese take-out carton! And the best part...you can make this meal in thirty minutes.
Most of the time, I follow someone else's recipe when I cook. But sometimes I like to experiment with a recipe I create. When I do, I make sure to share my creations with you.
