Salmon is one of my favorite proteins. It's light, packed with nutrients, and surprisingly filling. And I always feel a fresh burst of energy after having salmon as my entree. On top of it all, salmon is easy to bake or grill. This simple recipe includes broccoli, zucchini, and tomato for healthy carbs and you can serve with a side of brown rice if desired to get your whole grains in as well.
First, preheat the oven to 350 F. While the oven preheats prep your veggies. You'll need one cup of cherry tomatoes sliced in half, one cup broccoli florets, and half a zucchini cut in slices.
In a small bowl, combine 2 Tbs olive oil, 1 Tbs balsamic vinegar, 2 cloves minced garlic, 1 tsp parsley, 1/2 tsp salt, 1/8 tsp crushed red cayenne pepper, and 1/2 tsp lemon pepper.
Line a baking dish with foil and lay out the salmon. You want to have enough foil around the edges to be able to fully cover the top of the salmon and veggies before putting them in the oven. Baste salmon with half the balsamic and olive oil mixture.
Line the veggies around the outer edges of the baking dish and drizzle with remaining balsamic and oil mixture.
Wrap the excess foil over the top of the salmon and veggies and bake in the oven for 30-35 minutes or until the salmon can easily flake apart with a fork. Serve and enjoy!
