Weekends tend to be super busy around our house. Brighton is home from work and knee deep in projects and maintenance around our little homestead. I'm juggling the baby and chores around the house and helping Brighton when I can. Then there's the random errands we have to run and church on Sunday, and often times we have plans to meet up with family and friends. Even though we still wake up early on the weekends, before we know it, the day is half over and we still have much to do. So a lunch that's easy to whip together is a must. I threw this together the other day and it made a perfect, light but filling and flavorful lunch with little hassle and easy cleanup.
One of the best parts of this meal is the simple ingredients. All you need is the tilapia (obviously), brussel sprouts, broccoli, butter, chili paste, and parsley. Yep, that's it.
