I have a hard time cooking meals in the summer. Using the stove or the oven makes the house hot and sticky, and there are much better activities I could be doing with my time other than cooking. But a girl's gotta eat! And my hubby needs to eat even more, so cooking is just one of those necessary tasks. However, I like to make the meals as simple and quick as possible so I can get back to the fun stuff right away.
Apart from the store bought sausage, I used fresh produce from our garden for this meal. We'd spent all afternoon picking vegetables and pulling weeds, and I'd completely forgotten to do any meal prepping for supper. So with some quick thinking and a little input from my hubby, I threw together the sausage and veggies in a pot and added just enough seasonings to bring out the natural flavors the medley created.
So simple, quite healthy, and pretty tasty. Food doesn't get much better than that!
